Many people are locked into serving turkey for only a few holidays per year. Turkey recipes provide a healthy dietary option for nearly any day of the week or time of year, however. Pity the epicurean novice who has never experienced a barbeque that includes turkey burgers! Roasted turkey with bread stuffing is fine for Thanksgiving and Christmas. For a truly scrumptious meal any day of the week try this one for sweet and sour turkey thighs. Purchase a package of about three pounds of plump fresh turkey thighs. After washing and patting them dry immerse in a sauce made as follows: Sweet and Sour Turkey Legs Use one cup of orange juice and one eighth teaspoon of orange zest. Add one quarter cup of cane syrup and one half cup of vinegar. Thicken with one tablespoon of corn starch added to a few tablespoons of cold water. Stir all ingredients in a two quart sauce pan over medium heat until the desired consistency. Cool slightly before use. If time allows marinate the turkey thighs in the sweet and sour sauce in a sealed container for about two hours in the refrigerator. These may be left over night. Cook in deep casserole or lasagna pan for one hour at 350 degrees Fahrenheit. Another cooking option is to use a four quart slow cooker on high for three hours. When desired tenderness is achieved turn the cooker back to warm. It is also possible to cook a smaller portion in the microwave oven in a microwave safe bowl. In general all poultry may be cooked for six minutes per pound on high. Many people aren’t comfortable with turkey that isn’t browned so a combination of microwave and conventional oven may be used. In this case simply use the oven for about twenty minutes at 350 degrees. Watch for any signs of burning. The same recipe will make a cooked substitute for barbecue sauce when grilling turkey. This low fat entrée will be a real crowd pleaser when coupled with paper party goods for any climate or time of year. Never rule out turkey for a luau or pool party. Searching for a unique appetizer? Buffalo turkey wings will be the most unusual dish at any party. Just use a favorite wing sauce to coat the washed and patted dry wings. Cook in deep pan in medium heat at about twenty minutes per pound. Don’t prepare more than one per guest! Serve with celery sticks and ranch dip just as with chicken wings. But when planning for a party don’t overlook the obvious favorite: turkey club sandwiches. A large sub bun can be cut into quarters or even eighths and topped with generous portions of veggies. Offer a variety of condiments which guests may add themselves. Hold sandwiches together on a tray with decorative toothpicks. Always have plenty of themed paper napkins, cups and plates.
